Howdy! I’m back in your inbox with flavorful food 😀 and this week I’m sharing a meal plan that I’m prepping for my husband who will be home with the kids while I’m away. And I’ve got 13 ways to add extra nutritional punch to your meals.
Speaking of nutritional punch, herbs are a terrific (and delicious!) way to amp up the nutritional profile of your meals (so should I say 14 ways?!). Herbs are rich in antioxidants, provide anti-inflammatory properties, and can even protect against cancer, among many other benefits. Every spring I plant a tabletop herb pot close to our kitchen and grill full of a variety of herbs that I can easily take a few snips from. Keeping them accessible makes adding them to our plates easy and they look beautiful. Have you tried this yet? Give it a go if not! It’s a great step into gardening too.
My husband was away this weekend for a wedding, so while I've been short-handed in the kitchen preparing food and cleaning dishes, I've been accompanied by a delightful audiobook. I'm halfway through The Husbands and can't wait to see how things unfold. The story begins with Lauren coming home one night to find a husband, even though she's not married. This husband goes into the attic, and a new one emerges in his place, creating an ongoing exchange of husbands through her attic.
As Lauren navigates this peculiar situation, she moves through various husbands—sometimes quickly, sometimes lingering with one longer—while trying to decide what she ultimately wants for her future. Each new husband brings changes and uncertainties, keeping her in a constant state of flux. The story is fascinating and entertaining, made even better by the narrator's exceptional talent, especially with the variety of accents for each husband (quite impressive!). This audiobook was featured in my Summer Reading Issue, and it's certainly living up to my expectations, especially in the absence of my own husband. 😂
This week I’m focusing on packing in nutrients before I travel the latter half of the week and easy meals for my husband to manage while I’m away.
🥞 breakfast:
blueberry pancakes, I’m using a vanilla pancake recipe from the Unbelievably Vegan cookbook (Charity was featured in The Game Changers documentary, which is all about plant-based athletes and very interesting!) but they are pretty similar to this recipe. I just add fresh blueberries and top with Vermont (obvi!) maple syrup, so tasty!
Snickers overnight oats— holy cow this is so good! I made it for my boys on Friday and they were all out of their minds over it. 😂 And for fun I calculated the protein which came out to nearly 40 grams per bowl thanks to chia seeds, peanut butter, oats, nuts (I used sliced almonds), soy milk, and dates.
