Happy last day of June! Is anyone else as dizzy from the passing of time as I am? I feel like it was a mere 25 seconds ago I was talking about how fast June arrived and here it is waving goodbye in the rearview mirror. 😅
Next week we are headed to my husband’s parent's house on Lake Ontario for the 4th and I’m excited for lots of grilled meals and s’mores. Do you have any fun plans for the 4th?
I love getting a peek at what others eat in a day so if you feel the same way, here is a look at everything I eat in a day, summer edition.
I’ve started drinking a tall glass of water with a splash of apple cider vinegar to start my day. I used to do this with lemon water but ACV is much more convenient and thus more sustainable of a practice for me to maintain. Then I have my mug of salted maple oat milk coffee, it’s truly the best treat to start the day with. For breakfast, I had a bowl of Forager cashew yogurt topped with homemade granola (recipe below) and fresh berries— hurrah for berry season!
We went on our daily morning walk through the neighborhood and following that I’m always craving fruit or a fruit smoothie so I cut up a watermelon and enjoyed a big bowl of it with a few mandarin oranges. I sprinkled the fruit with two tablespoons of hemp seeds for added nutrients and protein (10 grams!).
For lunch I had a marinated tofu and pesto sandwich with spinach (recipe at the end) and it was sooo good. I also had some green goddess salad that I made a few days prior. I followed lunch with a mug of green tea.
