Last week, I did a thorough pantry and fridge deep clean in preparation for the back-to-school season, driven by a craving for ease in snack and lunch prep alongside busy weekday dinners (highly recommend doing this if it’s been a while for you too!). I discovered countless packages with less than a serving left or items that had expired, leaving me longing for a more streamlined approach to feeding my family. I love good food and enjoy a variety of flavors and textures, but I also value simplicity. As we move into fall, I’m turning my focus to simple ingredients and meals, prioritizing recipes that rely on staple ingredients rather than one-off seasonings or items we may not use again.
This week my meal plan is low-effort, allowing us to focus on connection and quality time together as we settle back into the school routine. I also put together a list of 10 go-to plant-powered lunches we rotate through during the school year for easy reference—balancing what my kids love with the nutrients they need to thrive at school.

I’m a long-time country music fan but it’s also the epitome of summer to me so closing out these last weeks of the season with Post Malone’s new country album, F-1 trillion, feels like the perfect send-off. I love so many of the collaborations on it, from Dolly to Brad, to Blake to Tim, hehe.

🥞 breakfast:
3-ingredient sourdough discard crumpets and MyBACON— holy cow this animal-free bacon made with just mycelium (aka: mushroom roots!) and seasonings is the best store-bought plant-based bacon, hands-down. Find it where you are!
