save this recipe for a super easy one-pan weeknight dinner loaded with plants

Over the past year, there's been a lot of buzz around the topic of consuming a variety of plants and the "magic number" of 30 different plants per week for optimal gut health. Introducing this concept to my family has turned our meals into a fun and educational challenge, encouraging us to explore and diversify the plants on our plates. Sometimes, in a single meal, we manage to include upwards of 15 different plants—many not just from fresh sources but also from dried, canned, or frozen varieties, which can be just as nutritious, if not more so, than their fresh counterparts.

I'd never taken the time to track how this adds up for me over an entire week—until now. I decided to count every plant I ate last week, without intentionally aiming for 30 different sources, to see where my typical meal planning landed me. The results caught me by surprise! Read on for a full breakdown of my plant count and a look at what I eat in a week as well as what’s on the menu this week.

We just hit up Coscto so you can pretty much call this a Costco-based meal plan but once again I’m leaning into simple, wholesome, low-fuss meals as we continue to find our groove with back-to-school rhythms. And this week we introduce sports practices back into the mix (…oh…yay…). Read on to the end for a look at some of the meals we ate last week too— so many good dishes!

  • breakfast sausages and English muffins— I’m getting closer to figuring out the unicorn weekday 100% homemade, vegan, and whole-food breakfast sandwich and I cannot wait to share it here once I do.
