As spring produce begins to make its way to the market and we begin our own tradition of starting our garden seeds in the basement, the excitement for the produce abundant season upon us makes me giddy!
Today I’m sharing some egg replacement options our family has loved for years, an extensive list of everything I love from Costco including some secret online-exclusive gems I’ve stumbled upon over the years and some things we’ve been eating and enjoying lately. Pop some ice cubes into your salted maple oat milk latte and let’s chat about food!
I’m still loving The Wellness Scoop every week and I walk away with tangible knowledge and insights. I don’t think I’ve ever had a regular podcast routine in my life, it feels nice to have a place to come back to each week. I’m often listening to them while in my kitchen putting away groceries or prepping a meal— it’s a lovely time.
I’m also very engrossed in Good Dirt by Charmaine Wilkerson on audio (thanks to Libro.FM for the ALC) at the moment. I loved Wilkerson’s first book, Black Cake, and I have very high hopes that so far she is already delivering. The narrator is spectacular!


One day in late 2018, on my transition to a completely vegan lifestyle, I made a simple but significant change—I stopped buying eggs. This was part of my gradual approach to letting go of certain animal-based staples, but for some reason, eggs stood out the most.
I was curious: Without eggs, what would I use for baking? For breakfast? For protein? The first discovery that amazed me was that, when it came to baking, I didn’t even miss them. With the right combination of flour, sugar, and butter (for me—vegan), eggs turned out to be completely non-essential.
Since then, for the past six years, I’ve been exploring all the ways to eat deliciously without them. Whether you're an egg lover, an egg avoider, or simply looking to cut costs, I hope the egg alternatives I’ve come to love will help you along your own journey.
First things first—if you're looking to replicate the taste of eggs (for anything other than their function as a binder in baking), you'll want to get your hands on black salt, also known as kala namak. This naturally occurring salt is sourced from volcanic mines in Northern India and Pakistan, as well as nearby salt lakes. Its distinct sulfuric flavor gives dishes that unmistakable hard-boiled egg taste, making it a game-changer for egg-free cooking. You can find it at local Indian markets or order it online from places like The Spice Lab. It lasts forever—I bought a 1lb bag years ago, and I’m still using it today!
My favorite egg replacement recipes—
Tofu scramble— amazing with a side of toast or in a breakfast burrito or for dishes like fried rice. Bonus: my kids LOVE this, especially with some spinach thrown in (I know!). This is also how I add “egg” to fried rice too.
Chickpea egg omelette— So easy and delicious loaded with veggies on a lazy Sunday morning or the “egg” in a sandwich (my personal favorite use for it with some rice paper bac’n or tempeh bac’n).
Flax egg for baking— All the nutritional benefits of flax and a binder for your baking. Use your fave recipes— vegan or non— and swap this for the egg, presto!
recently shared this wonderful no eggs, no problem resource from King Arthur Baking Company for even more ideas in baking. Bob’s Red Mill egg replacer is also a handy baking staple.French toast— I’ve made dozens of different types of vegan french toast, all of them are excellent. Here is an easy go to.
Tofu egg salad— so yummy on sourdough with sprouts or crisp lettuce— I don’t really use a recipe anymore, just measure and make with my heart.
JUST Egg egg replacer— You can buy this amazing ingredient at your local grocery store in a carton (near the chicken eggs) or in the frozen section in individual patties. This is the best liquid egg substitute there is, perfect for an omelette or breakfast sandwich. I love how Joanne Lee Molinaro describes it in The Korean Vegan Cookbook: “It was like a door that I assumed would remain closed for the rest of my life was thrown wide open.” Yep, it’s superb.
You can also make your own JUST Egg dupe (and save even more $$) which I have also tried and it’s fantastic!
