As much as I love a fully stocked fridge brimming with fresh produce and a balanced meal plan, some weeks just call for a reset—using up those extra items that have gathered in the corners of the freezer and pantry. Truth be told, I think I enjoy these times almost as much. After returning from travel, the last thing I want to do (besides unpacking) is go grocery shopping. I see these as satisfying opportunities to clear things out.
This week, I'm sharing the meals I whipped up when I wasn’t feeling inspired or motivated to create elaborate dishes, using only what we had on hand. If you haven't checked out my Sunday Menu featuring my pantry staples, that's a lot of what I'm using in this meal plan—along with some frozen and thawed tofu (the optimal way to prep tofu) and the remaining bits lurking in our fridge and freezer. Special shoutout to frozen fruit for keeping us fueled with nutrients and fiber when the fresh produce was gone!

The narrative dives deep into societal themes of influencer culture, the impact of social media, and the complexities of growing up online. With a full-cast performance, the audiobook kept me thoroughly engaged from start to finish.
